Manual Egg Sanitisation: Prepare a dipping solution by dissolving 5-10g Eggsan powder per L of water maintained at a temperature of 100°F (35°C). Place eggs in plastic or wire baskets and immerse for 10-15 minutes.
Machine Egg Sanitisation: When using an oscillating machine, immerse eggs for a maximum of 10 minutes. Prepare fresh solution after each cycle or when it becomes visibly soiled. Do not rinse after sanitising / washing eggs. Allow eggs to air dry to form a protective coating before setting or packing.
Eggsan passes BS EN1276 food industry standard at dilution of 1 in 250 (achieves 5-log kill within 5 min. contact time at 20°C, in the presence of high organic contamination and hard water conditions).
